Because the water in the bread evaporates, therefore, all that's left is the starch and flour in the bread--devoid of water.

why are you putting bread in the microwave? the fact that it got all hard did not tell you that bread does not go in the microwave?

add water to the microwave in a small bowl, this will stop your bread from drying out
