Roast beef: pre heat oven to about 400. Season the beef with any herbs or spices you like. Use a lot because it is a thick piece of meat. Roughly cut veg. Some that work well are carrots, celery, onions, potatoes. Put all this in a roasting pan or even cookie sheet. Season these too and drizzle with olive oil. If your worried about the fat in olive oil, studies show that it is very healthy and diets with lots of olive oil are some of the healthiest. Put it in the oven. After the roast gets a nice crust, about 10-15 minutes, turn down to 350. Baste once or twice to make sure it stays moist. This is something my mom would make when I was little and I love it so much!

This is one we do around the camp fire, but you can do it on a BBQ pit.
Lay out a sheet of tin foil
Take two leaves of cabbage and lay them side by side.
Place a large ball of lean ground beef on one of the cabages.
Cut some veges up and put them on top of the meet. Make sure you put some peppers and onions in there.
Put plenty of spices on top of the meat especially some whole crushed garlic.
Put the two halves together and seal the tin foil around it.
Cook on the grill for about 5 minutes on each side depending on the heat. This can be placed right on the coals.
The cabbage will turn black, but you don't eat it. Its just in there to keep everything moist.
Let me know how it turns out.

Kabobs on the grill. You can use steak or chicken. Soak the vegetables in Italian dressing for about 30 minutes and they put them right on the grill. Also, you can make a tin foil bag and put the veggies soaked in the dressing in it and cook them on the grill. The are better like that cause they are more moist. Cook the meat separate from them.
GOOD LUCK!

curry is always great and fairly easy if you buy the box curry from the store you can thin out the sauce with broth and it's made with coconut milk not regular milk so your fine there. add lots of fresh veggie (you can use most anything, squash, carrots, potatoes, etc.) Then had beef, pork or chicken, you could even go vegetarian with tofu. It's a great dish with rice or even on tortillas if you make the sauce thick enough and have lots of meat and big pieces of veggies

I make a stew or pot roast in the crock pot. Put whatever veggies in there that you like, some fresh chopped garlic and your beef and you can buy a pre-packaged seasoning that you just add water to or you can make up your own depending on how you want it to taste. I like mine spicy so I add a can of chopped tomato with jalapenos to it also. Or you can cook it faster on the stove top, but to me it tastes better after its been soaking all together all day in the crock pot. 8 hrs on low or 4 hrs on high.

A good way to cook any meat is with Foil Cooking Bags by Reynolds. It makes it easy to cook without having to watch it - just stick it in oven and set timer! It is easy to experiment with any vegetable and/or seasoning. It is kinda fun coming up with your own personal mixtures!

Since you enjoy spicy and Italian foods, consider looking into Italian chili and making any changes you see fit to the ingredients and/or preparation.

How about sausage! Everyone loves sausage... What's not to love? The stomach lining of a cow grinded together with some intestines. Mmm sausage! Pair it with some spinach and you got urself a meal.
