I have to offer a dessert menu for 100 guests. The venue does not have a kitchen onsite, so the desserts I offer will have to be made ahead of time. Any suggestions on offerings?

Aren't you the lucky one!!! You didn't mention what you're having for dinner or if you're having dinner, but here are some suggestions for easily transportable things that might please a crowd of that size:

Lemon bars
Pecan bars
Oatmeal cookies half dipped in dark chocolate and drizzled with white chocolate
Strawberries dipped in both white and dark chocolates
Pretzel rods dipped in caramel and drizzled in chocolate
Strawberry bread

The list goes on. You also didn't mention if you had refrigeration, but the above can easily be made and kept without it. Good luck!

Chocolate mousse.


For only 100 guests the amoount of different kinds should be kept to a minimum for most occassions and most people will go for either of the above two desserts. But it really all depends on whom the guests are.

I would suggest a couple of sheetcakes. That way you can also make different varieties. They transport easy & you can easily adjust the serving sizes. You can buy foil type disposable baking pans almost anywhere now days & some have a top with them. If this is not too formal a function a large variety of several cookie platters also works well. I saw The Barefoot Contessa of the Food Network make these yesterday...I have not tried them yet but given the ingredients and the look of them, how could they not be delicious! It is a Pecan Bar. It can be presented very professionally and formally. I think it may work for you. Its also on the decadent side which is perfect because that is what people expect from a caterer -- to have decadent food. Give it a look-see.

If it is a buffet type setting you could make up some profiteroles or petit fours. If you are plating and serving just make a cake and keep the plate presentation to a berry coulis and a sprig of mint. Can you give more details?

What about chocolates? You can just do an assortment of truffles.
