It is most noticeable when this occurs in the back of my neck and shoulders. It is not painful, and has only started to happen on a regular basis over the last couple of months.

Any ideas on what may cause something like this?

Any insight you can provide will be greatly appreciated.

There are several factors which may cause this
First - how old are you? if you are a teen, your bones, tendons, muscles etc are growing at a phenominal rate, and in some cases can cause "loose joints" which can result in cracking or cramping.
If you are older,
You may be developing artheritis
You may have a hormonal imbalance
You may need to increase your calcium intake.

Over all, I would suggest you see a doctor if it becomes serious enough to cause pain.

Get a good Yoga DVD and start a routine.
Drink lots of citrus, eat a lot of greens, stay away from the deadly white foods (sugar, flour, and of course corn syrup).
Start reading up on diet and exercise (Prevention magazine is fun and easy, for instance).

Strength and flexibility will reduce those complaints. Honest!

I recently heard that joints cracking a lot can be a sign of a thyroid problem, but I do not know if that is true - something to check into though.

Calcium spurs usually connected with arthritis. If so go to health store and get pure DSMO.

Sounds like your spine is out of place. You may want to consider seeing a chiropractor and get this checked out and treated.

This happens to me too!
Your joints are just relieving excess air caught in between.
