Welfare Cake
"This cake is so moist that you would swear it was from a box!"
Original recipe yield: 1 - 9x13 inch pan.
INGREDIENTS:
3 cups all-purpose flour
2 cups white sugar
1/2 cup unsweetened cocoa powder
2 teaspoons salt
1 tablespoon baking soda
1/2 cup vegetable oil
2 tablespoons distilled white vinegar
1 1/2 teaspoons vanilla extract
2 cups water
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine flour, sugar, cocoa, salt and baking soda. Make a well in the center, and pour in the oil, vinegar, water and vanilla.
Mix well, then pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until a toothpick inserted into the center comes out clean.

No Egg Cake (Chocolate or Vanilla)
Ingredients:
3 c. flour
2 c. sugar
1 t. salt
2 t. soda
¼ c. cocoa (optional)
2 c. water
2/3 c. vegetable or olive oil
2 T. vinegar
2 t. vanilla
Method:
Put the first 5 (4 if you don't use the cocoa) ingredients into 1 gallon zip plastic bag and shake to combine and break up any lumps of cocoa if necessary. Note: Always hold the bag by the top to prevent the bag from opening. In a 4 c. measuring cup mix the additional ingredients together.
Pour into flour mixture in the zip plastic bag and mix well until any lumps are smoothed out. Cut the corner of the bag off and pour into a greased and sugared 9"X 13" pan or a 9" to 10 " spring form pan and bake for 35-40 min. at 350 º oven. Cool and frost with chocolate frosting.
Chocolate Frosting In A Bag
Ingredients:
¼ c. (1/2 cube) softened butter
½ t. salt
1 t. vanilla
½ t. almond flavoring
4 T. cocoa
4 ½ to 5 c. powdered sugar
¼ c. milk, cream, canned milk, or buttermilk
Method:
Mix everything together in a 1 gallon zip bag until creamy and spread on cooled cake. If the spreading consistency is not smooth enough, add more milk or powdered sugar until it is the right consistency. Makes enough to frost 9"x13" cake.

Chocolate Heart Cake
Ingredients
12oz self-raising flour
4oz Cocoa Powder
1 tsp baking powder
1/2 tsp salt
8oz sugar
4 floz vegetable oil
8 floz cold water
2 tsp vanilla essence
2 tsp vinegar
Mix together all of the dry ingredients in a large bowl. Mix all of the wet ingredients. Make a well in the bowl of dry ingredients and pour in the wet ingredients. Stir them together. Place into a heart shaped cake tin. Cook in a preheated 180 degree oven for 30 minutes or until a knife comes out clean. Cool on a cooling rack and decorate with vegan cream and strawberries.
If you only have a round or square cake tin, decorate the cake with heart shapes of cream.

Not sure of your recipe, but when I make cake I substitute 1 T per egg and it comes out just fine.
