For Chicken Breasts:

** This is a great one that's super easy...
Sprinkle poultry seasoning on both sides of all chicken breasts. Place in a glass pan. Open a can of 'cream of chicken' soup. Mix in 1/2 c. of sour cream. Pour mixture over chicken breasts. Cook at 350*F for 45-50 minutes or until juices run clear.

**For Mexican Style chicken breasts...My husband LOVES this recipe...
simmer a sliced green bell pepper and onion in butter or **OLIVE OIL** (what I use) until softened.- set aside. Do not drain pan. Add chicken breats to warm pan. Cook for 7 minutes on one side. Flip breasts and cook an addl' 7 minutes or until juices run clear. Top chicken with bell pepper and onion strips. Sprinkle with cheese and allow to melt!

**For an easy recipes that's different and uses items you may already have...This is soooo good.
Crush cheese nip or Ritz crackers. Melt 1/3 cup butter. Dip chicken in butter and coat in crushed crackers...Bake at 350*F for 45-50 minutes or until juices run clear.

**Hope one of these sounds yummy!!**

Baked Honey Chicken:

1/4 cup honey
1/4 cup lite soy sauce
1/3 cup minced onion
2 tablespoons grated fresh ginger
2 garlic cloves, minced
1 (3-pound) whole chicken, skinned
Vegetable cooking spray
2 teaspoons paprika
Garnishes: gourmet salad greens, lemon slices

Combine first 5 ingredients in a large heavy-duty zip-top plastic bag; add chicken. Seal and chill 1 hour, turning occasionally.

Coat a rack in a roasting pan with cooking spray.

Remove chicken from marinade, and place, breast side up, on rack. Pour marinade over chicken. Tuck wings under.

Bake, covered with aluminum foil, at 375° for 45 minutes. Uncover; coat chicken with cooking spray, and sprinkle with paprika. Bake, uncovered, 45 more minutes or until a meat thermometer inserted into chicken thigh registers 180°, basting occasionally. Remove from oven, and let stand 15 minutes. Transfer to a serving dish; garnish, if desired.

Yield: 6 servings

I'm with Snooty (above) on this one. Simply salt, pepper (garlic if you like); bake in 350* oven. Simple, tasty. If you want more "fattening" then place chicken in 9x13 pan and pour cream of chicken soup (w/can of milk) over it; bake.
Easily good - don't buy the rotesserie chicken at the store for 8.00 just get a roaster chicken, salt pepper, chicken seasoning; bake in oven (like roasting a turkey). Takes a couple hours depending on size of chicken, but it's easy and yummy My favorite seasoning is: McCormicks makes a "Rotesserie Chicken Seasoning" I use it on chicken a lot no matter how I am preparing.

Easy things to coat chicken with when baking:
Italian Dressing
Barbecue sauce
Crushed up cereal (rice krispies, corn flakes, rice or corn chex, etc.)
Bottle or whatever marinade-type stuff is in the refrigerator.
Bisquick, salt & pepper.
Seasoned bread crumbs.
Seasoning salt.
Cranberry sauce.
I've heard of people using 7-UP and Coke, but haven't tried it yet. Maybe with some of the other things above.
