We're having our summer wedding at a nice bed and breakfast where the owner is an Italian chef, and we are trying to figure out a nice luncheon for the reception. Right now our ideas are chicken and salmon, or maybe lasagna with perhaps another dish incase someone doesn't like it. Anyone else have any ideas? Or something that may go with the lasagna?...which I'm also worried about because it's messy!

One of the selections for our wedding brunch reception was chicken piccata (a traditional italian dish). All our guests loved it. I think your idea of a serving chicken and salmon is great. I would probably stay away fron lasagna as well since it can be messy.

Since the owner of the B&B is a chef - best bet is to ask him/her. He/she may have some specialty dishes, or favorite dishes they like to make. This will also make the chef feel important and a big part of the venue. It will also put that special touch on the luncheon.
If it were me - and aside from having an italan chef prepare the fare - I would go with something lite like salads. The problem with only serving fish as a meat - some people do not like or can't eat fish.

One last suggestion - pick up some catering menus from some of the higher end hotels or catering places - this will also give you some ideas of local flare.

If the chef is best at Italian food, ou should stick to his element. Maybe a pasta dish, or even lasagna would be a nice change from the chicken or fish option you get a most weddings.

I think the Italian Chef will have a lot of ideas. Look through some cookbooks or Martha Stewart's Weddings for ideas. Lasagna for a summer lunch sounds too hot and heavy. Salads, fruit, cheeses, pasta salad.. remember, it's summer and it's lunch.

How about Ravoili Primavera instead of the lasagne? Use fresh summer veggies and fresh delicate pasta filled with cheese instead of dripping off the fork with cheese... also less heavy but still substantial. Some really crispy roasted chicken and a little poached salmon and you have options for everyone. Add a bean salad and a green or ceasar salad and garlic bread - yum :)

How about an antipasto platter?
Chicken Parmesan and Chicken Picata are two popular choices for your chicken. For the salmon I would go for a poached salmon with a white wine and butter sauce.
If you are worried about the lasagna being messy how about a veggie lasagna with a white sauce?

I would steer clear of the lasgne, it's a delicious food, but it is infact messy and not everyone will want to eat that heavy. The chicken/salmon is a great idea - add a nice green salad and you've got a nice menu.

How about Manicotti instead of the Lasagne? Similar but slightly less messy. One of my fav's if done properly. I do think the chicken and/or salmon are still good ideas though too. Grilled steak would go awesome with the pasta but pricey and tricky to get cooked just right to please everyone. Another take on the pasta may be stuffed shells. I'm starting to get hungry....mmm...gotta go. Good Luck!
