Stuff them with a bit of Brie and wrap them in Parma Ham then bake.
Adds wonderful flavoursome moistness to the chicken.
You can make a simple White Wine sauce by frying off some onions and garlic in a saucepan with butter, when softened add a couple of glasses of white wine and simmer for a bit so the alcohol cooks out of the wine and reduces slightly, bit of salt and pepper then bung in some Creme Fraiche (You can use cream but creme fraiche will not split or curdle) and warm through.
Pass the sauce through a sieve to get out the big bits and pour over your lovely chicken.
Serve with some green veg and perhaps some boiled or roasted new potatoes ;-)
Very easy to do and very impressive when put on the table.
You could add some mushrooms to the sauce too if you liked, obviously don't pass the sauce through a sieve though.

I like Cinnamon Chicken,
Sprinkle a little garlic, salt, pepper, and cinnamon to taste on the chicken breasts
in a bowl with 2 heaping table spoons of butter.sprinkle some more
Mix it all up and then massage it into the chicken.
cover the chicken with the excess butter mixture
and bake at 350 for about an hour , hour and a half
use the drippings for the stuffing
and if you have a deep fryer cut up some potatoes and make some home made french fries.
open up a can of jellied cranberry sauce.
and make sure you have a nice chocolate cake for dessert.

Easy Parmesan Garlic Chicken
Prep: 5 min.
Ingredients:
1/2 cup 100% Grated Parmesan Cheese
1 envelope Good Season's Italian Salad Dressing Mix
6 boneless, skinless chicken breast halves about 2 lbs)
1/2 tsp. garlic powder
1. Mix cheese, garlic powder, and salad dressing mix.
2. Moisten chicken with water; coat with cheese mixture. Place in shallow baking dish.
3. Bake at 400 Degrees F. for 20 to 25 min. or until chicken is cooked through. Makes 6 servings.

Honey mustard chicken is good as already suggested.
Per chicken breast:
3 teaspoons of mustard ( I like wholegrain)
3 teaspoons of honey
2 teaspoons soy sauce
mix together. Cut several slits in chicken (not all the way through) and cover with sauce. Leave to marinade for 1/2 hour. Cook on foiled baking tin for 25 minutes at 180C.
I like it served with rice and a salad. Its also low fat!

Slash the breasts. If you have tarragon either fresh or dried rub that in with garlic powder and salt and pepper and oil for coating. Grill or fry. When done part way drizzle with lemon juice.
Serve with a mixed veg sauce - everything finely diced and sweated off, mushroom goes well with this, some mushroom ketchup and more lemon juice. Allow the veg to soften and then add creme fraiche or single cream or elmlea. Heat through and serve with tagliatelli, mashed potatoes or rice and a simple salad.
This is my signature dish!

I had this yesterday it was yummy.Lightly browned an onion and some mushrooms added a tin of tomatoes boiled it up for a bit and put it in an oven dish.Cut a slit in the chicken and filled with a piece of cheese(mine was brie with peppers).Wrapped it in streaky bacon--browned it and placed on the tomato mix Cooked it at 180 for about 35 mins .It was good ---I'm having leftovers latter.I ate it with baby corn and mange tout.It would go with spuds pasta or rice just as well

Try sprinkling mixed herbs on the breast and then lay slices of lemon on top. Wrap up in silver foil and bake for 20-30 minutes. They will not dry out because of the lemon and the herb/lemon flavour will infuse making a really moist and tasty meal. We normally have boiled potatos and steamed vegetables (Brocolli, Sugar Snap Peas, Sweetcorn).
Have a good meal.

Make a chicken special like they have in Fish & Chips shops (well they do in South Wales anyway). A Chicken Special consists of diced chicken, peas, onions & mushrooms in a nice thick gravy. Serve with chips. It's delicious - believe me you will not be disappointed, neither will the people that you are cooking for !!! Simple but absolutely gorgeous !!!!

Baked Pineapple Chicken
* 3/4 cup all-purpose flour
* 1 1/2 teaspoons salt
* 1 teaspoon celery salt
* 1/2 teaspoon garlic powder
* 1/4 teaspoon onion powder
* 1/2 teaspoon ground nutmeg
* 8 chicken breast halves, skin removed
* 1/2 cup butter
* 2 cups pineapple juice, unsweetened
* 1 tablespoon plus 1 teaspoon soy
* 1/4 cup granulated sugar
Mix together flour, salt, celery salt, garlic powder, onion powder, and nutmeg; dredge chicken in seasoned flour mixture. In a heavy skillet brown chicken breasts in melted butter. When chicken is golden brown, transfer to a 13x9x2-inch baking dish. Combine pineapple juice, soy sauce and sugar; mix well and pour over chicken.Cover tightly with foil and bake in 350° oven for 30 minutes. Remove foil and continue baking until chicken is tender, about 30 to 40 minutes longer, basting with pan juices several times. Serve sauce with the chicken, if desired.

I mix up some Passata (purreed tomatoes), Worcester Sauce, Tomato Pureee, Garlic Puree, Chilli Powder and a tiny bit of Ketchup. Put you chicken in a dish and cover them in this marinade. Leave them for about an hour and then put them in the oven with some Roast potatoes covered in a Cajun Seasoning.
Serve with some cheese on top of everything. It's my special recipe and I love it!!
