Both of my brothers are allergic to eggs and I have found that replacing an egg with a tblsp of 1/2 white vinegar and 1/2 water adds the needed liquidity to make up for the egg.

They don't always hold together as well, but they are always still delicious.

This is my mom's recipe and my favorite cookie of all time! I know it sounds strange but the potato chips make it extra crisp and the salty and sweet go together so well.
POTATO CHIP COOKIES
1 cup (2 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
1/2 cup chopped toasted pecans
1/2 cup finely crushed potato chips
2 cups all-purpose flour, sifted
Pecan halves


Preheat the oven to 350 degrees F.
In a large bowl, cream together the butter, 1/2 cup of the sugar, and vanilla. Add the toasted pecans and potato chips and stir well. Add the flour and stir to combine.

Place the remaining 1/2 cup sugar in a shallow bowl.

Form the mixture into small balls, about 1 tablespoon each, and place on an ungreased baking sheet.

Dip the bottom of a heavy flat-bottomed glass in the remaining 1/2 cup sugar and flatten the cookies on the baking sheet, dipping in sugar before flattening each cookie. Place a pecan half in the center of each cookie. Bake the cookies until light golden brown, 14 to 16 minutes.

Using a spatula, transfer the cookies to a wire rack to cool. (The cookies will keep in an airtight container at room temperature for up to 3 days.) Let harden on a wire rack.

Shortbread

1 Cup butter, room temp
1/2 Cup powdered sugar
3 C All Purpose flour
1 tsp vanilla
pinch salt

Whisk dry ingredients well. Beat butter and vanilla until fluffy. Add dry ingredients to butter. Mix just until combined. Press or roll out to about 3/8" thick, and cut into small squares or use simple cookie cutter. Prick a few holes in each, or use the tines of a fork. Place on parchment paper. Dust tops w/ a bit of granulated sugar to make them sparkle. Bake at 325ºF for approx. 15 mins or til golden brown. about 3 dz. Cool on racks; store room temp in airtight container.

SUGAR COOKIES (NO EGGS)

1 c. sugar
1 c. sour milk
1 tsp. salt
Flour
1 c. shortening
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla

Cream together sugar and shortening. Add salt and baking soda to milk and dissolve. Sift 2 cups flour with baking powder. Add milk mixture alternately with flour mixture. Stir in enough flour to make dough stiff. Turn out onto a well floured surface and knead in flour until dough is not sticky.
Shape into balls of about 1 cup of dough. Roll dough to about 3/8" thickness and cut in desired shapes. Bake at 425 degrees until edges of cookies begin to brown. Remove from cookie sheet and cool on a clean towel.

NO EGG CHOCOLATE CHIP COOKIES

1 c. butter
1 c. confectioners' sugar
1 1/2 c. flour
1/2 tsp. soda
1 c. Quick oats
1 1/2 tsp. vanilla
6 oz. chocolate chips

Cream butter and add sugar. Sift flour and soda. Mix in. Then add oats, vanilla and chocolate chips. Bake at 350 degrees for 15 minutes or until lightly browned.

EGGLESS COOKIES

1/2 c. honey
3 c. whole wheat flour
1/4 tsp. allspice, ground
1/2 c. oil
1/2 tsp. cinnamon, ground
1/2 tsp. nutmeg, ground

Blend honey and oil and heat for 1 minute. When cool, add rest of ingredients. Dough should be stiff. If too thick, add unsweetened fruit juice. If too thin, add more flour. Chill. Roll out to 1/4 inch thickness. Cut with cookie cutter. Arrange on oiled cookie sheet. Bake at 350 degrees for 12 to 15 minutes.

You can substitute 1 T per egg and the cookies will come out fine. I made chocolate chip cookies and snicherdoodles this way and they were perfect. I also do this when I make cakes.

chocolate cookies

125g butter
1/3 cup caster sugar
2 tablespoons condensed milk
1 teaspoon vanilla essence
1 cup self-raising flour, sifted
120g cooking chocolate, grated

beat butter n sugar with an electric mixer til light n fluffy. beat in condensed milk n vanilla essence. fold in sifted flour and grated chocolate.
drop two teaspoonfuls of mixture onto greased baking trays, allow room for spreading.
bake at 160C for abt 15 mins. cool on trays for 2-3mins. transfer to a wire rack to cool completely.
