anyone got some. I want to try and be adventurous and healthy but dont like tomato o mushrooms....any ideas?????

Spinach eggs - Super easy, super delicious, super healthy and has a great rustic presentation fit for company.

sautee diced onions and garlic in olive oil (I'd use mushrooms too, but to each his own)

add whisked eggs with pepper added to taste (I usually make about 3 per person for dinner, and omit 1 yolk per person.

Sramble eggs

remove pan from heat

add to the pan while it is warm (not too hot) roughly torn fresh spinach and crumbled feta turn the spinach through egg mixture, not to cook, but more to wilt the spinach and warm the cheese a bit .

Garnish with black olives and serve with pumpernickel or 12 grain toast

I think this is delicious on its own, but if you really need a sauce with your eggs, some Worschestire Sauce is good....or salsa, but you said you don't like tomatoes.

Cheese Strata

Refrigerate this egg and cheese casserole overnight, if desired, then pop it in the oven for breakfast.

* 16 slices white bread
* 1 pound cheddar cheese, sharp, shredded
* 2 teaspoons dry mustard
* 2 teaspoons salt
* 1 teaspoon pepper
* 1 small can green chiles, chopped, 4 ounces
* 4 cups milk
* 6 eggs
Preheat oven to 350 degrees. Trim bread; cut into cubes. In a 3-quart baking dish, put in half the bread cubes, cheeses, dry mustard, salt , pepper, and green chilies. Repeat a second layer. Pour beaten eggs and milk over the layers.Cover and refrigerate for at least 1 hour or overnight. Bake (uncovered) in a 350 degree oven for 30 to 40 minutes or until bubbly and slightly brown on top.

You can add any veggies, meat or cheese to this dish that you like.

Asparagus Frittata

3/4 lb asparagus-steamed til tender
6 large eggs
1/4 cup grated parmesan cheese -- freshly grated
1 tbsp minced parsley -- Italian
salt and freshly ground pepper
2 tbsp unsalted butter
milk

Whisk eggs with a little milk, add parsley and season with salt and pepper. Heat a heatproof pan on medium, melt butter add eggs, lAdd the eggs and cook til they are almost set, add asparagus and cheese. cook about 5 minutes more.
It will still be a little jiggly in the center.
While the frittata cooks, preheat the broiler and arrange a rack about 8 inches . Put the skillet under the broiler and cook, watching constantly, until the surface of the frittata is firm and lightly colored.
Let the frittata rest in the skillet for a few minutes, then transfer it to a platter or cutting board.

Bacon-and-Egg Casserole:

Assemble this hearty dish the night before, and bake the next morning.

1 (16-ounce) Hawaiian bread loaf, cut into 3/4-inch cubes
2 cups (8 ounces) finely shredded Mexican four-cheese blend
1/2 pound bacon, cooked and crumbled (8 slices)
8 large eggs
2 1/2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried mustard
1/2 teaspoon Worcestershire sauce
Salsa or sliced fresh tomatoes

Arrange bread cubes in a lightly greased 13- x 9-inch baking dish. Sprinkle with shredded cheese and crumbled bacon.

Whisk together eggs, milk, salt, pepper, mustard, and Worcestershire sauce. Pour over prepared dish; press down bread cubes with a spoon to allow bread to soak up liquid. Cover and chill 8 hours. Let stand 30 minutes before baking.

Bake at 350° for 35 minutes or until set and golden. Serve with salsa or sliced fresh tomatoes.

Note: Hawaiian bread may be found in the deli section of supermarket. Ten to 12 white bread slices, cubed, may be substituted for Hawaiian bread.

Yield: Makes 8 to 10 servings

5 eggs
8 oz cottage cheese
2 tblsp melted butter
2 cups shredded monterey jack cheese
1/4 cup flour
1/2 tsp baking powder
3 tsp chopped or minced jalapeno pepper

Mix eggs, flour, & baking powder. Add cottage cheese, butter, jalapeno, then mix in cheese. Spray glass pie dish with non stick cooking spray and spread mixure into the dish.

bake at 400 for 10 minutes and then turn down to 350 and bake additonal 15 - 20 minutes or until done (check center for doneness with knife)

I like to add diced ham bits also. It is very good and will serve 4-6 people.

how about quiche? simple to make, especially just using store-bought pie crust.

Quiche Lorraine
Ingredients:
9-inch crust pie
8 slices bacon, crisply cooked and crumbled
1 cup shredded Swiss cheese (4 ounces)
1 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper

Heat oven to 425 degrees. In bottom of one crust pastry shell sprinkle bacon, cheese and onion. Beat eggs slightly; beat in remaining ingredients. Pour into quiche dish over bacon, cheese and onion.

Bake 15 minutes. Reduce temperature to 300 degrees and bake about 30 minutes longer or until knife in center comes out clean. Let stand 10 minutes before cutting.

i like to make this recipe for lunch, it was called spanish eggs in the magazine but i have no idea why - it's not remotely spanish!

use round flour tortillas to line the holes in a muffin tin by cutting a quarter out of the whole one, pushing it into the hole and sealing the edges with water.
brush a thin layer of harissa paste inside each tortilla mould.
crack an egg into each.
top with grated cheddar cheese and thinly sliced spring onions.
bake in a hot oven until the cheese browns.

v tasty!

If you have a farmers market, take advantage. A few months out of the year I can get quail eggs and a variety of colored and speckled eggs that have different flavors. One of my best selling brunch items is quail egg poached in the shell, I cut off the top with a shrap serrated knife and add a small dash of good salt and fresh pepper. I serve it with toast points. This may be out of your comfort zone but dont be affraid to try new things. Good luck.

well, not sure if this is very creative, but it IS healthy, yummy, and satisfying:

*1 or 2 slices of whole grain bread
*carton of All Whites egg whites (or similar product)
*toppings such as low-fat/fat free shredded cheese (chedder or mozzerrella or both or other), once in a while i treat myself to center cut or turkey bacon, cooked veggies like peppers, onions, spinach...

1toast bread
2put 6 heaping spoonfuls of egg white in a cereal sized bowl (cooks in one fluffy round shape to fit on ur bread) and microwave for about 1 1/2 min
3 put cheese on toast, then egg while still hot(will melt cheese), then veggies or whatever. top with other slice of bread or eat open faced.
4 have fun with differant toppings, but look for lowfat/fatfree or veggies if trying to be healthy.

erm omlette... it myt not b the healthiest choice tho lol. try 1 egg, 1 potato skinned and grated into small slices or even with a cheese grater and some herbs and put that into a frying pan and make an omlette out of it.
