I keep most vegetables in the fridge, except potatoes, onion, garlic, apples and lemons. I throw out all left over food at the end of the week because I'm scared it might already have mould on it that I can't see.

How long and under what conditions should I keep food so that it remains mould-free? I don't eat bread at all and only a little cheese (I know I shouldn't).

Well I've never heard of invisible mold on food but always pay attention to food packaging dates. Usually cheese blocks are no good after about 1 1/2 weeks just due to oxygen causes the molding process. I use the 1 week rule, if its something that hasn't been touched, has been open and smells not right it goes in the trash especially if it has water sitting in it that I didn't add.
Create a system of recongnizing per your nose and commoncense how long you should keep something. If you find your buying too much and it goes bad before you can use it all, buy less and save more in the long run.
