I've tried parting it down the center before I blow dry and flat iron it but the natural side part just comes sneaking back. And if I try and force it to stay parted down the center, it looks funny :/
Any suggestions?

Try using a styling gel (licquid or in tube) before blow drying. As you blow dry, make sure you have plenty of gel along the natural part. To eliminate the natural part, you'll need to use a curling iron & using small sections of hair. You will need to re- train the hair & in time, you'll hardly be able to tell where the natural part is. I know from experience.

I had a natural center part & I wanted a side part. So I would brush my hair & part it how I want it before I got in the shower & then make sure it stayed parted how I wanted it in the shower. Then when I got out of the shower I would brush through it & part it again & either sleep on it wet or blow dry it like that. After a couple of times it just stayed like that & now I have a natural side part. You may have to get a bobby pin to help it stay in place & you have to stick with it. You cant keep on changing your part every other day. This worked for me so I hope it helps you a little bit! Good Luck :)

sounds like you have to retrain your hair. what I would do is to wash your hair and part it how you want it, like down the middle, make sure you brush or comb it smooth and pull it back into a ponytail secured at the base of your head. every time you wash, part in the middle, use your gel and smooth it into a ponytail with the center part. you might have to wear this style for a while, but gradually your hair will retrain to part in the middle. you can where a loose ponytail, a bun, a braid whatever, but keep the center part until your hair retrains

Maybe you can use some gel or hair spray to make it stay in place?

i wouldnt part it down the middle. it looks frumpy. sorry, but it does. you are way better off using your natural part.
