the egg whites obviously won't add flavor, they are probably just to help bind the meat mixture together. I would try adding a tiny bit of milk to the meat and a sprinkle of bread crumbs if it's not holding together. Never tried it though. Good luck with your steak.

My daughter is allergic to eggs. You can probably substsitute about 2-3Tbs milk, water or other liquid in salisbury steak. It won;t hold together quite as well and will be a bit less rich. On the other hand, if you don't do a side by side test most recipes survive leaving eggs out fine.
Don't try this for recipes that call for the eggs whites to be whipped

I don't use any eggs in my salsbury steak. I never even though about using egg. I just use milk soaked bread crumbs to bind the ground beef.

There is a way of substituting Mayonnaise for egg whites. However I have forgotten the ratio; you should be able to get this info at Foodnetwork.com. I have been looking for a good recipe for Salisbury Steak would you by chance be willing to share yours.

I don't think there is a substitution for egg whites. You know what I would do? I always ask a neighbor for an egg or two, serious. Good luck.
