i love those thick, fudgy hot chocolate from Spain, i tried one of the recipe i picked up on the net but end up with a weird tasting goo (because of the corn flour) is there a way of making your own at home? i'm not asking for authenticity but a close one would be ok.

My oh my... one of my favorite things! I make this myself at home so here is my rough recipe (you must be brave as it uses cream!):


2 bars of your favorite dark chocolate
1.5 cups milk
1 cup heavy cream
1/3 cup sugar (to taste really, but its what I use)
1 teaspoon vanilla
1 teaspoon salt (use the salt!!! It brings out the flavor A LOT!)
2 teaspoons cinnamon (optional)


Over MEDIUM LOW, heat cream and chopped chocolate bars until melted through. Add milk and heat again. Add the rest of the ingredients and whisk to combine. Thats how I usually serve it, but...
if it isnt as thick as you like it put 1 tablespoon cornstarch and 1/2 cup milk into a jar and shake (do this step or cornstarch will clump up). Add to hot chocolate pot and whisk in. Serve and enjoy!!!

I love mexican hot chocolate, too.
I have made this first recipe, but I have not made the second one, yet...as for the hot chocolate recipe, I did not "froth" it with the molinillo, I just used my whisk.

Mexican Hot Chocolate

Mexican chocolate mixed with warmed milk then frothed with a molinillo.

Serves: 2

I N G R E D I E N T S
2 cups milk
1 disk of Mexican chocolate or (4 ounces dark bitter chocolate)
1 vanilla bean, split lengthwise

I N S T R U C T I O N S
Warm the milk and chocolate in a saucepan. Scrape the seeds from the vanilla bean and add the seeds and bean to the milk.
Stir with a molinillo or whisk until the chocolate is melted and the mixture begins to boil. Remove from the heat and froth the chocolate with the molinillo or the whisk. Serve immediately in ample sized mugs.

Mexican Champurrado

A special hot chocolate thickened with masa and flavored with piloncillo and aniseeds.

Serves: 4 - 5

I N G R E D I E N T S
1/2 cup fresh masa (corn dough) or 1/2 cup masa flour (masa harina) mixed with a 1/4 cup hot water to blend
2 1/4 cups milk
1 1/2 cups water
1 disk Mexican chocolate
3 tablespoons piloncillo, chopped or 1/3 cup brown sugar plus 2 teaspoons molasses
1/4 teaspoon crushed aniseeds (optional)

I N S T R U C T I O N S
Place the water and the masa into the jar of a blender and blend until smooth. Transfer to a medium sized saucepan.
Add the milk, chocolate, piloncillo (or sugar, molasses combination) and the aniseeds if you wish to use them. Bring the mixture to a simmer, whisking with a molinillo or whisk until the chocolate and sugar is melted and well-blended. Strain the mixture through a medium sieve (optional) and serve hot, in mugs.

SPANISH HOT CHOCOLATE
Chocolate a la Taza
Light and tender buñuelos de viento are often dipped into chocolate a la taza, a hot chocolate drink thick enough to coat them.


1 cup milk
2 1/2 oz chocolate a la taza (70 g, preferably Valor in bar form*), or 2 oz bittersweet chocolate (not unsweetened), broken into pieces, plus 1 1/2 teaspoons cornstarch Bring milk with chocolate a la taza just to a boil in a 1 1/2-quart heavy saucepan over moderate heat, whisking until chocolate is melted, then simmer mixture, whisking, 2 minutes. Remove from heat and let stand 5 minutes to thicken.

1 entire circle of Abuelitas brand chocolate
4 wholes cinnamon sticks
1 cup sugar
marshmallows if desired

Place the cinnamon sticks in a microwave dish with water and heat in microwave.
Allow the water to become very hot - to a boiling point. Turn off microwave and allow the cinnamon sticks to steep in the water until the water is cinnamon colored.

Once done, place the water (hot) in the blender and add the entire circle of Abuelitas chocolate and the cup of sugar.

Blend on high so it will get foamy. Once the chocolate is dissolved, just pour it into cups and top with marshmallows. You can add more or less sugar to taste as desired.

I would make Flan. It's pretty easy. I use the Goya packets. It might not be Authentic flan using Goya but it's easy and I like the taste. Here is a homemade recipe for you: Ingredients * 1 cup white sugar * 3 eggs * 1 (14 ounce) can sweetened condensed milk * 1 (12 fluid ounce) can evaporated milk * 1 tablespoon vanilla extract Directions 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside. 3. In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with aluminum foil. 4. Bake in preheated oven 60 minutes. Let cool completely. 5. To serve, carefully invert on serving plate with edges when completely cool.
