Are there any certain kinds of bread or cheeses that go well with them?

I like making Panzanella (Bread Salad).

Rough chop a loaf of good, solid, crusty bread
Dice 8-9 tomatoes (blanch and peel if desired)
Chop parsley
Mix 2/3c oil with 1/4c vinegar, 1clove chopped garlic, s & p
Mix together bread, chopped roasted peppers (1c), tomatoes, parsley, dressing, (and capers and black olives if you want).

Cover and let it sit at room temp for at least 1hr. It gets better as time goes on.

If that is too much, you can just keep those peppers on hand and make a quick red pepper sauce to accent any meals in the future. Really, all you need to do is puree the peppers with a little oil, s & p. It's just that easy!

Fresh mozzarella, roasted peppers and slices of roma tomatos. Yum. You could serve with some toasted, buttered italian bread as well.

I'd go with a sourdough baguette for the bread. For cheeses I'd go with buffalo mozzarella, feta, a camembert or brie, or goat cheese. Serve the peppers on an antipasto platter with mixed olives.

fry them with eggs
or
make salad:
1. finely chopped garlic
salt
vinegar
oil
mix all ingredients and pour on the peppers
2. fresh peeled tomato cut in small cubes
peppers cut in small pieces
garlic ( or onion )
vinegar
oil
