Apples have a lot more water in them than donuts do. Also, the makeup of apples is a lot easier to convert to energy.
Yeah, you would gain a pound right after you eat them. Because you've put a pound of material in your body. But the weight from the apples will pass through your body and generally be easier to burn off. The weight from the donuts is more likely to stick around.

It's about calorie density, a lot of apples weight is in fiber and a more complex sugar than is found in donuts. A donut is pure starch, sugar, and fat.
