We don't know when it will happen, but the Gods and Goddesses do even if they can't prevent it from happening. Some people think it already has and that is where the Adam and Eve legend comes from. During Ragnarok all the Gods and Goddesses but two will die. There will be only two human survivors.

Personally, I feel since Sol and Mani are still in the sky and Skoll and Hati haven't been seen in quite a while, Ragnarok hasn't yet happened. Fenrir is still safely chained and the Einherjer haven't come marching down 600 abreast to kick some... well, you know. Also, I don't recall seeing Thor and Jordmundgand's 'grudge match' and there aren't any legends about it happening already. (Other than things like the infamous 'fishing incident' that scared Loki so badly, of course.)

Patience, my pretty. It is coming eventually. We think...

As in all these things, I am sure it will ONLY occur when everyone in the whole world becomes a "True Believer' ..(i.e. never)
