i haven't tried to make any wine, but i was wondering if i could use the syrup in soft drinks to make wine, rather than a fruit juice concentrate.

You can use any sugar source to make 'booze'.
Wine, however, must be made from fruit or fruit juice/concentrate.
Dilute your syrup with pure water and add yeast (wine yeast, not bakers yeast) then wait for the bubbling to stop. Yummy prune flavored hootch!

Yeast needs more than sugar for fermentation and fructose is just that, sugar. Soda syrup has a lot of preservatives in it that prevent fermentation.

If you're going to make wine, do it right.
