Because it get the blood pumping around your body as you can't play volley ball staying still. It use all of your body.
When serving you need strenght to get the ball over the net
If you want to play pro you have to stay health and eat a balance diet, so they eat the right foods
As rally can go for a long time it build up endurance as player with less endurance make mistake earlier.
It also a team sport so you socailize with other people
