How small is this labyrinth you wish to make?
At college I'd use card or foam board (Kappa or something I can't recall its name) to make small 3D Models buildings for an art design project.
You can use hard plastic sheets (cut them to size). Thats what my friends use whe they make scratch build models.
Hope you get to build your laybrinth... it sounds fun.

How about a small hedge cut small so if you get board with your labyrinth being small you can just let it grow to a big one this changing the way your labyrinth looks each year so your garden doesn,t get boring. Another good idea would be to make out of bonsai trees to bring a japanese feel to it!

You can get very small pieces of board and/or wood at any craft store. This worked very well for me.
