if evolution is real and supposedly took millions of years then its safe to assume all creatures didnt do it at the exact same time, so were are the in betweens?

It is NOT safe to assume that! On Yahoo! Answers some half-evolved human
will find some insane reason to be angry with you. Some are afraid there
might even be a {pssst -- God} and they would have to have decent values
instead of primevial base desires or they'd begin to feel guilt or shame.
It is easier for them to simply use others, degrade others, and blame others.
SO BE CAREFUL -- those half-evolvers are everywhere and they hate!

There are, us, we are still evolving. This does not mean we are getting 'better and better' either. Humans are by no means in any perfect form. Most creatures on planet earth are always evolving.
Ostrich, chicken, road runner are probably what you are looking for, a little more obvious
