Start by making a roux with one cup vegetable oil and one cup roux. In a large pan heat the oil and gradually add the flour until you have a dark brown color. Have your vegetable pre-chopped, the trinity as it is called, usually consists of onions, celery and bell peppers. A good amount is 2 cups onions, 1 1/2 cups celery and one cup bell peppers, all finely chopped. I always add fresh chopped garlic, about 1/4 cup. Combine all the vegs in a bowl and mix in some spices like salt (2 teas), black pepper (1/2 teas), cayenne (1/2 teas), pinch dried basil, oregano and thyme.
When your roux is ready and half the veg mix, cook for a minute then add the rest. Set this roux, veg mix aside. Now this is the base for any type of gumbo! In a large pot, heat your stock or water, about 1/3 of the pot. When this boils add the roux mixture by large spoonfuls at a time, dissolving each time before adding another. At this point you could add okra, sausage, chicken, ham, or shrimp or any combination. This is a basic explanation, after you make it a few times you will know what consistency suits your liking.

I make a ca-jun okra/chicken gumbo with smoked sausage. You start by making a roux which is equal parts of oil and flour, I use a large serving spoon for a measurement. When the roux turns a dark brown add two chopped onions and one chopped bell pepper and keep stirring to prevent scorching. Add two quarts water keep stirring. Season to taste. Add three pounds boneless chicken breasts cut in chunks and two pounds sliced smoked sausage. My okra is pre-cooked with onions ,bell peppers and tomatoes and garlic frozen. ( smothered okra ) Add okra and keep boiling until chicken is tender. Add water as needed.Served over cooked rice

Get some1 2 cook it 4 U, lol. Every1 has their own recipe of ingredients. It all depends on the things u like vs. what u want in it. The main ingredients are: Shrimp, chicken, sausage,crab, okra, bell pepper, crawfish (not 1 of my favorites), rice ( very optional), garlic, bay leaves, onion, hot sauce or tobacco sauce, and roux. Remember u dont have 2 have all these ingredients just a majority!

Throw anything and everything into a pot of boiling water.
Simmer.
If it is true gumbo, add some sliced okra, soaked in water and salted.
Simmer some more.
Taste.
If you don't like it add some bullion, any kind.
Yum, you have gumbo.

Basic Seafood Gumbo

INGREDIENTS:

1 1/2 cups crabmeat
2 pounds shrimp, in shells
3 quarts water
2 small bay leaves
1 teaspoon lemon juice
1 small onion, cut in wedges
salt and black pepper
parsley
2 pounds okra, sliced
4 tablespoons bacon grease, divided
4 tomatoes, peeled & chopped
2 onions, finely chopped
2 green peppers, finely chopped
1/2 teaspoon crushed red pepper, or to taste
4 tablespoons brown roux
reserved shrimp stock
salt, pepper, thyme, parsley, to taste
hot cooked rice


PREPARATION:

In a large Dutch oven boil the water with bay leaves, lemon juice, onion wedges, salt, pepper, and parsley. Wash shrimp and add to pot; boil for 2 minutes. Peel shrimp and return shells to the stock for later use.
Put shrimp and crab meat in refrigerator until ready to add to the gumbo.
Saute okra in 2 tablespoons bacon grease in large heavy skillet. The okra will turn darker as it cooks. When okra is soft, transfer to a stew pot and add tomatoes. Stir and mix together well. Clean skillet and heat remaining 2 tablespoons bacon grease. Sauté the chopped onion, green pepper, and red pepper. When soft, add to the stew pot.

In a saucepan, warm the roux; strain shrimp stock and stir into the roux. When well-blended, add to the large stew pot with the other ingredients. Bring to a boil and simmer for 1 1/2 hours, adding more strained stock if needed. Taste and add salt, pepper, thyme, and parsley to taste. Simmer for 1 to 2 hours longer; add the shrimp and crab meat and cook for 15 more minutes.
Serve with fresh boiled rice in soup bowls.
Serves 6 to 8.
