Well first of all, they are cut differently, but fried the same way. Curly fries usually have a slightly spicy red spice on them while regular fries just are salted.

Curly fries tend to be a bit chewy or firm and have seasoning whereas regular fries are just regular fries.

They curl, and they are tossed in a seasoning mixture before they are frozen, regular french fries aren't.

It's in the texture of how they are cut and how they differ from drawing heat. Plus they probably have a different coating.
