If I have time to either spend the day in Barossa or Hunter Valley, which would you recommend -- both for the wine and the romantic scenery?

Both are excellent and both produce great wines. The Hunter is a little more spread out but if you pick an area of the Hunter to go to then there will be plenty of vineyards to visit. The Barossa is generally prettier than the Hunter and it is closer to Adelaide than the Hunter is to Sydney. If I was in Adelaide, I would also consider the wineries of McLaren Vale and Clare while in NSW there is some lovely wine coming from the Mudgee area as well as down towards Canberra.

All wine growing areas in Australia produce some very good wines and a lot of reasonable wine. You wouldn't go to Adelaide just to spend a day in the Barossa or to Sydney to spend a day in the Hunter. From whichever city you go to, organise a trip to the wineries. There are also many great wineries near Perth, Melbourne and Hobart and even Brisbane.

Definately the Barossa. More romantic and better wines

Hunter valley all the way.
award winning wines 5 star accomodation golf courses galore its got the lot
Plus theres too many **** wits in barossa.

The lower Hunter vineyards are all reasonably close together, so you can travel from vineyard to vineyard tasting wine. It is polite to buy a bottle or 3. The vineyards are taxed on the wine they give away.
