The word croustilles is more appropriate for potato chips.
Lays potato chips would be croustilles Lays.
Frites on the other hand are French fries

According to my Larousse bilingual dictionary, the French term for "potato chips" is "frites," fem. pl. noun. They use the same term, if I'm not mistaken, for what we'd call "French fries." The dictionary also lists the Americanism "chips," but I try to shy away from Americanisms when I'm speaking French.

The above answer is french fries. Chips are either just "chips" or, even better, "des croustilles".
