One of the most famous choral pieces is "O Fortuna" (you've heard it, trust me) from Carl Orff's Carmina Burana. The entire choral work of Carmina Burana is very good. Also, Mahler's 8th symphony (a.k.a. the Symphony of 1000) is spectacular. It requires two choruses and a boy choir. It is based on Goethe's Faust. If you've never heard it, you need to hear it quick.

There's the ultimate choral piece- The Messiah, by Handel. He composed other types of music as well.

BRAHMS wrote a u-haul-load of choral works and they're very good, some of them are seldom heard (unlike the Messiah which is probably played every day somewhere in the world--heck, it's probably being performed somewhere right now).

William Walton wrote "Belshazzar's Feast" which is a lovely piece of choral music.
Beethoven's 9th symphony includes the famous choral finale, including "Ode to Joy".
Brahm's "Requiem".
Ralph Vaughan Williams "Serenade to Music". (I love VW).
