I too have Colitis.
NO tomatos, NO Oranges, or Juices.
it's been almost 3 yrs and it's such a drag.
I get www.thaikitchen.com thai pad rice noodles in the bowl, and eat that, it's 2 minutes in the mircorwave.
My safe foods are plain yogart or vanilla yogart
Whey protien that I mix with yogart or gatoraide.
I can eat skinless bonesless chicken cooked with salt, and garlic powder. NO spices.
I can eat liver, I like it, it's tender and easy to digest.
Rice, Mashed potato, I cook in microwave, minute rice. and I even have used instant mashed potato in the box when I travel.
Getting enough protien in the diet is a challenge, that's why I use the whey protien www.traderjoes.com is where I buy it at.
I use Bean-O with each meal, and Gas-X afterwards if needed.
If I eat something that I know is spicey, and may hurt me, you know what I mean???
i take 2 pills of ACTIVATED CHARCOAL TABLETS found at the drug store in the anti-acid isle.
I alway have Imodium AD and use it 1-8 x's a day.
I've been to the doctor and he can't give me a diet, just says everyone is different.
Fruits:apples PEELED!! Bananas and Pears PEELED!
Vegetables: Peas, Okra, Aspragrass
I can eat bean burrittos with cheese on white flour tortillias.
White bread, garlic bread agrees with me.
I call it the white food diet!
Yogart, Chicken, Dairy, Cottage Cheese, Bananas, Rice, White Bread.
The thai noodles really saved me! I use 1/2 of the powdered spice in the single serving packets. I have not used the spice in the boxes. I do use the noodles. I add chicken or sirlion steak.
I cut the lean steak meat up very small and thin and cook it fast, and add it to pasta noodles, or rice noodles.
Also I can eat mac and cheese, and Swanson's Chicken Pot Pies.
tuna fish, any fish!!
Just bland food.

I don't know if this will work for colitis, but it seems to fit what you wrote.
Get a fairly lean cut of meat (inexpensive is fine, because of how it'll be cooked) and cut into 1/2-serving-sized pieces. Coat with lightly seasoned flour (salt, pepper, onion powder, garlic powder) and brown over medium-high heat in a well-sprayed (non-stick pan spray) or lightly greased skillet. Turn to brown both sides well. Once the meat is all nicely browned, remove the pan from the heat and carefully add about 2-3 cups water. Reduce heat to medium-low and return pan to heat. Bring to a simmer and cover. Simmer 45 minutes, stirring about halfway through. Add a little more water if it seems to be boiling dry.
Serve with rice or mashed potatoes. This stuff (simmered steak, we call it) keeps well for up to a week, so I make it ahead on an evening when I do have a little time; I can then pop it into the microwave and enjoy it again on another evening when I'm rushed.
