In your case

Maria? , te gusta bailar ?
Le gusta bailar, señor (but its better like this "Señor, le gusta bailar?)

Note: And don't forget this (?) because without this, change the sentence

well u have a question mark for the Maria one, so if the question mark is part of the phrase it would be Maria, te gusta bailar? asking maria do u like to dance, and then le gusta bailar, senor.

It can be both depending in how intimate one person is with the other. If they are friends or if they don´t know each other.

¿María, le gusta bailar? (formal)
¿María, te gusta bailar? (informal)

in the second case is definite formal as the person is addressed as Mr.

¿Le gusta bailar Mister?
