Mix oil with salt, pepper, dried thyme, and dried cumin, (and any other spices you want.) Then coat the lamb chops with the oil and cook it. Add some whole garlic cloves to the pan too. Goes well with basmati rice and a salad.

Mmmmm love lamb chops.....
I like to make mine different every time, it's fun to experiment!
Here's a couple of ways...
Sprinkle on black pepper, fresh peppercorns preferred. Add a rosemary rub (rosemary in olive oil), Let marinate for a hour or so. Just before putting on the grill, brush on some dijon. Cook it till lightly pink in the middle.
Also, another fav. I've had it this way since I was a little girl.
Season you chops with some pepper, sea salt, onion powder, garlic powder. Let marinate for a hour or so. Stick it on the indoor grill, cook it to your ideal of perfect. Now the sauce, the infamous mint sauce, not jelly (yuck). Generally, the mint sauce can be bought in your regular grocery store it will be in the same section as the mint jelly, probably right beside it.
Anyways, you can nuke your sauce if you like, I personally like a little warm.
Served best with dinner rolls or yorkshire pudding (bread like). It's somewhat of a traditional England style of recipe.

Lamb chops with cherry mint sauce
6 Colorado lamb chops
1 cup extra-virgin olive oil
1 tablespoon fresh rosemary leaves
4 cloves garlic, sliced
Kosher salt
Black pepper
Cherry Mint Sauce, recipe follows
6 fresh mint sprigs, for garnish
Rinse lamb chops under cold running water and pat dry with paper towels. Place the lamb chops in a large resealable plastic bag and add olive oil, rosemary, and garlic. Let marinate overnight in the refrigerator.
Preheat your grill. Remove the lamb chops from the plastic bag and season with salt and pepper. Place the lamb chops on the grill at a 45 degree angle to establish nice grill marks. Once the internal temperature has reached 135 to 140 degrees, remove the lamb chops from the grill and let rest for 5 minutes before serving.
Spoon the Cherry Mint Sauce over the meat and serve with mashed potatoes and string beans, if desired. Garnish each plate with a sprig of mint.
Cherry Mint Sauce:
2 cups dried cherries
4 cups cabernet
2 cups mint stems
1 cup mint leaves, chopped
1/4 cup sugar
3/4 cup water
1/8 cup cornstarch
Place cherries, wine, and mint stems in a large skillet and bring to a boil; cook until reduced by 2/3 and then remove stems. Whisk in chopped mint and sugar. In a small bowl, mix together water and cornstarch to form a slurry, and then add to the cherry sauce. Cook the sauce until it coats the back of a wooden spoon.

this is my favorite lamb chop recipie because its so simple and fast!
FOR 4 SERVINGS YOU WILL NEED:
4 to 6 blade bone lamb chops, about 1/2 inch thick
3 tbsp. lemon juice
White pepper
1 tsp. dried thyme leaves
1 1/2 tbsp. butter
1/2 tbsp. salad oil
Salt
Lemon wedges for garnish
1. Trim excess fat from lamb chops, if necessary. Place in a single layer on a rimmed baking sheet. Drizzle with 2 tablespoons of the lemon juice. Sprinkle lightly with white pepper, then evenly with thyme. Refrigerate to blend flavors for 1/2 to 1 hour.
2. In mixture of heated butter and oil in a large heavy frying pan, cook lamb chops over moderately high heat until well browned on both sides (3 to 4 minutes per side). Salt to taste. Remove chops to a warm platter.
3. Pour off and discard fat in pan. Add remaining lemon juice to pan, stirring to dissolve brown drippings. Drizzle mixture over chops. Garnish with lemon wedges. Good served with: Mashed potatoes or rice pilaf, and sliced fresh tomatoes.

Just mint jelly, make sure to cook them on low heat for a long time. I love lamb chops.

The only thing I do with them is sprinkle a little garlic salt on them before broiling. Perhaps a mint jelly sauce on the side.

I put mine on the grill
i also like them rare/med rare
so i grill them high an turn them in about 3-5 minutes
and the only think i eat with mine is mint jelly>>>>>in thejelly dept of you store.

Inredients:
3 Tbs. vegetable oil
3 Tbs. rosemary garlic seasoning
1 Tbs. Mediterranean sea salt
1 Tbs. parsley flakes
1 Tbs. ground black pepper
Sprinkle rosemary garlic seasoning, sea salt, parsley and black pepper evenly over the lamb chops.
Heat vegetable oil in saut`e pan to medium-high.
Sear both sides of the lamb chops.
Cook until desired.
Serve with sauted asparagus.
