I agree with chasin_ja..., the alcohol will evaporate, if that's what you are concerned with. We do not consume alcoholic beverages, but wine in cooking is OK with us. I suppose a small amount may have gotten around the evaporation process and still be in there, but minuscule amount. If you just do not like red wine, well, some natural vinegar would be good to use instead. I never follow recipes exactly anyway, since I never have every single ingredient on hand and it always works out, no matter what the recipe is. Sauerkraut is very good with mushrooms. Try that instead. We just had homemade perogies the other day stuffed with mushrooms and sauerkraut and it was awesome.

Use can substitute beef stock in its place.You can take the stems of the mushrooms (don,t discard) abd saute them in a little butter adding small amount of salt and cook till all liquid is gone then add a couple a cups of water, bring to a boil and reduce to a 1/4 cup.strain and use this in place of red wine. It is fantastic

Nothing is going to taste like wine. Is it so hard to pick up a bottle of cheap wine? You know the alcohol cooks away, right? So if alcohol is the problem, it evaporates and all you have left is the flavor.

red wine is usually just for flavor and when cooked awll the alcohol evaporates and only a vinagery taste is left. you could use water in its place or beer. some people even substitute lime juice.

Any kind of stock (beef, chicken or veggie) or water. If it sounds like the flavors will meld, try a fruit juice. I would probably try the beef broth first. It would give the most flavor.

Any recipe that calls for alcohol can be omitted.
Alcohol is usually an optional ingredient.
