DIRECTIONS
In a saucepan over medium heat, combine coconut milk, peanut butter, onion, soy sauce, brown sugar, and pepper flakes. Bring to a boil, stirring frequently. Remove from heat, and keep warm.

Peanut Satay Sauce
tablespoon oil
2-3 teaspoons crushed dried chili pepper flakes
1/2 cup finely sliced spring onions
1 tablespoon red curry paste
2 kaffir lime leaf, vein removed,chopped finely
1-1 1/2 cup coconut milk
3/4 cup crunchy peanut butter
2 tablespoons palm sugar (or white will do)
1 lime, juice of
Heat the oil and carefully fry the dried chilli flakes on low heat.
Add the spring onion, red curry paste and lime leaves and cook until fragrant.
Stir in 1 cup of coconut milk, the peanut butter and sugar.
Bring to the boil, stirring, and add the lime juice.
Thin to desired consistency with remaining coconut milk.

Peanut Satay Sauce
1/3 cup creamy peanut butter
1 tablespoon soy sauce
1 cup beef stock or chicken stock, use 1 cube and 1 cup water if necessary
1 tablespoon grated ginger
1 garlic clove, minced
2 teaspoons cornstarch
In a large pan, combine peanut butter, soy, broth, ginger, garlic and water. Mix well and heat through. Add the cornstarch to thicken slightly.

I had taken this satay sauce along with some chicken skewers and fried rice to the office pot luck dinner and it was all gone in minutes. So hope you enjoy it too.

1 tablespoon lemon juice
2 tablespoons soy sauce
1 tablespoon brown sugar
Dash hot pepper sauce
1 tablespoon vegetable oil
METHOD
Heat a pan. Add the vegetable oil. Add the garlic followed by the onions to the warm oil. Once the onions have softened, you can add all the remaining ingredients and cook until the sauce begins to bubble.
The sauce is ready to be served.

Simple Hot Peanut Sauce
* 1/2-1 cup of peanuts, fried
* 3-4 chili (as desired); a little of tamarind
* salt and sugar to taste; 1-2 lime leaves
* 100 ml hot boiled water
* 1 tsp of fried garlic
- Grind all dry ingredients as one, when it becomes soften and smooth, add a little bit of water and grind again untul everything mixed well

1 tsp. oil
¼ cup sliced green onions
½ tsp. ground ginger
¼ to ½ tsp. red pepper flakes
½ cup peanut butter
1 cup water
1 tbsp. soy sauce
make the peanut sauce by heating 1 teaspoon oil
over medium heat; add green onions and red pepper flakes. Cook 1 minute.
Stirring constantly, add peanut butter to green onion and pepper mixture.
Gradually stir in water and soy sauce until well blended. Add ginger. Bring to a boil until mixture thickens. Serve hot or at room temperature with chicken kabobs. Makes 1 ½ cups of sauce.

SATAY SAUCE
2 onions
2 tablespoons peanut oil
1/4 cup roasted peanuts
1/2 teaspoon chili powder
1/3 cup warm water
1 tablespoon brown sugar
1-2 tablespoons soy sauce
juice of 1/2 lemon
salt
Thinly slice one onion and saute in oil.
Cut the second onion into quarters and add to blender or food processor with chili powder and process until smooth. Add mixture to saute pan with onion, cook 2-3 minutes until heated through and slowly stir in the sugar and water. Add soy sauce and lemon juice and continue to cook 3-5 minutes.
Season to taste with salt.

Satay and Peanut Sauce
Ingredients
A) Satay:
1.5 kg chicken -deboned
1 stalk lemon grass
1 tsp sugar
1 tsp cummin
1 tsp coriander
1/2 tsp powdered cinnamon
2.5 cm piece fresh turmeric
8 shallots
salt to taste
B) Peanut Sauce:
1 cup sugar
1 bombay onion
1/2 cup tamarind juice
2 stalks lemon grass
2.5 cm piece ginger
3 tbsps pounded chilies
300 gms peanuts - roasted
A piece of galangal
salt to taste
Instructions
A:
Cube the chicken meat, drain and put aside. Grind coriander, cummin, tummeric, peanuts, salt and sugar. Mix this with the powdered cinnamon, diced shallots and 1 tbsp cooking oil, marinate the chicken with this mixture. Using special skewers, skewer 5 pieces of meat on one skewer, as in Kebabs. Gril over burning coal, constantly sprinkling cooking oil over the meat using crushed lemon grass. Turn over and continue grilling until the chicken is cooked Serve with peanut sauce.
B:
Grind the roasted peanuts. Put aside grind lemon grass, ginger and galangal until fine slice bombay onion and stir fry until soft add in ground chillies and the other ground ingredients add in tamarined juice and lastly peanuts, sugar and salt. Simmer until the gravy thickens. To serve, arrange a few sticks of satay on a plate and serve with abowl pf peanut sauce, cucumber. Satay also goes very well with compressed rice.
