say you have an amp with X amount of power would having two smaller amps bridged with 1/2X the power be better or would the bigger one be better?

Depends really. Are you wanting both amps to power one sub or are you planning on running speakers as well as a sub?
If you want just a sub, go with a mono block Class D amp, and go for one big one.
If you want to power speakers, go with a big multi channel amp or 2 little ones, one for the sub and one for the speakers

I run an 15 inch eclipse that is 1200 watts and i run a BD1000. i always go a little lower with the amp. there is no point for 2.

Pretty much what Alex said. the advantage with two is that when powering subs and speakers is that it is harder to hear clipping (when your amp is topping out) over the subs, but it will really stand out over regular speakers - bottom line is that with speakers you will have much better quality of sound when running two amps and you have it cranked up
