Well, there are wine recipes, reviews and critiques in all of the most aceint languages from Summerian/Babalonian to Eqyptian and Greek. Since all fermentation is the same for milk, wine, beer and cheese and these have been staple food in the Western cultures since befor writing... about as old as man kind itself.

2 to 4 weeks depending on the base ingrediant (grape, apple or cherry) and alcoholic content level. If you distill the wine you'll have brandy.
wine making has been around for as far back as the 1st century (early bagdad and earty China)
heres a good question to ask people "If adam knew about fermanting would he have made wine out of the fruit of the tree of knowledge of good and evil instead of eating it.

I find it no coincidence that every culture has discovered the art of distillation.
Wine can be dated back to the ancient Egyptians. Well over 5000 years ago.
