They wanted to prevent a strong central government because they just fought a bloody war to get away from a king; they were afraid that a strong central government could trample a man's rights as much as a king can. They weren't really against a government, they just wanted most of the power to belong to state governm,ent instead of a national one.

To really understand why colonists wanted self government, you need to understand the reasons behind colonization. So, why would England want colonies in North America? As countries go, England is not very large in terms of land mass and variety of natural resources. In North America they found a sparsly populated region brimming with natural resources which could be exploited for the use of the home nation. Given this mind-set, the colonies (and thereby, the colonists) were treated as no more than a possesion. The king's actions were always to take from the colonies for the good of England.
When the colonies had been established for a long while, more and more of the colonists came to think of themselves less as British and more as New Yorkers, Virginians, etc. With this shift in mind-set they obviously came to care about the place they call home and wanted what was best for them and their fellow colonists. With this rise in sentiment came dissatisfaction that their tax money and resources were being sent back to England rather than being used for their own betterment. You can see a tiny version of that same feeling today in Los Angeles where I live. Recently it came to be known that residents of the San Fernando Valley area of the city paid about 35% of total local taxes yet the Valley only received about 20% of city expenditures for public services. This led to a ballot measure where the residents of the Valley attempted to split with greater Los Angeles and set up self government.
So, American colonists wanted self government so that their taxes would be used at home and thier goverment would be concerned with their, and their neighbors, well-being.

Not all American colonists did want self-government. Those that did were tired of having to pay British taxes,quratering British troops, and serving in the British military without any representation in the British government. Basically, they were tired of being ruled by a kind five thousand miles away.

Not all of them did. The colonist were British subjects and some were happy with all the rights that went along with that. The ones that revolted were mostly businessmen (sound familiar?). Had we lost, they would have been tried and hung for treason.
