Ok, I have done salsa and cheese, or feta ham and spinach. I have also done bacon and cream cheese. You can mix pretty much anything you have a taste for. Just some little advice, heat the ingredients before you add them to the eggs, otherwise you will burn the eggs but have a cold filling. Enjoy.

INGREDIENTS

2 large eggs
salt and freshly ground black pepper
a small knob of butter
a small handful of grated Cheddar cheese

METHOD

Crack the eggs into a mixing bowl with a pinch of salt and pepper

Beat well with a fork

Put a small frying pan on a l
ow heat and let it get hot, add a small knob of butter

When the butter has melted and is bubbling, add your eggs and move the pan around to spread them out evenly

When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the
Cheddar

Ease around the edge of the omelette with a spatula, then fold it in half

When it starts to turn golden brown underneath, remove the pan from the heat and slide the omelette on to a plate

Some cheese, onions, mushrooms, some veggies if you like; like a bit of zucchini or tomatoes, and a bit of sour cream on top!
