I volunteered to cook this Friday for a church group of 10-12 people. Most are adults but a few are kids. I need something quick, easy ( I work ) delicious and kid friendly. I was thinking of baking 3 home made chicken pot pies w/ biscuits on the side and apple pie for dessert. I could boil and debone the chicken the night before then just mix the chicken, veggies and seasonings together the day of and bake. Unless somebody has an easier idea. Help!! Please!!

lasagna! so easy to prepare ahead of time, then just throw it in the oven the afternoon. but the problem is its unoriginal. pot pie sounds good if you think you have enough time for it.

A big pot of rigatoni. You can make to sauce the day before and then just mix the noodles with the sauce and keep warm in a crock pot. Toss a salad slice up some italian bread and you are good to go. Plus this will be cheaper and a whole lot easier. As for dessert, go get some store made cheesecakes and frozen strawberries. Get the whole berries and not the ones in the syrup. Let them thaw but save the juice. To plate, first sprinkle some hershey chocsauce on the bottom of the plate, then place the cheesecake, then add the berries making sure you spinkle some of the juice on the plate. this will make an awesome display with little effort. Or you could always do rice krispie treats. Take you pick. Good Luck...

Oh crap (literally!), what a horrible situation to be in! It seems you have your head screwed on (and I could not find one spelling/grammar mistake and that is very rare!), and are a hard-working, genuine person who seems either used or taken for granted. Yes you are working long hours and coming home to a mess and a depressing partner, but this shouldn't be the case. I do agree that if a man is out there working hard (and especially to support a partner and/or family) than the partner should make an effort and ensure the home is clean, fresh and food is on the table (all with respect of course!). Through reading what you said about her, she seems to be in some sort of depression. It seems there is something missing in her life, or some sadness, for those who don't reach their full potential or those with a tendency to never be bothered, or never clean up or look after themselves and their home seem to be suffering from something deep. I am not making the assumption that it's you, I'm just saying there may be something deeper than you think. She seems very angry (to attack you). I think your approach - which you say was nice - was the right thing to do. But even if being nice wasn't helping then I'm not even sure what you can do! The only thing I can think is make it fun, tell her that you'll both clean the place top to bottom together but play music loud, dance a little, or do something fun. And as a reward you will both go out afterwards for a lovely dinner. This probably won't be a continual thing but it could be a good start! Anyway, hope I've been a little helpful. But good luck!

Pasta is more kid friendly than pot pies. I would second the lasanga idea or possibly spaghetti or mac and cheese. Lasanga also freezes well if you want to cook it ahead of time. Cheesy garlic bread would also go well with this meal and can also be frozen until cooking time as well.

This is an excellent site for quantity cooking

May I suggest making this...

Beefy Mexican Lasagna
Prep: 20 minutes
Cook: 30 minutes
Servings: Serves 6-8
1 1/2 lbs. ground beef sirloin (95% lean)
9 corn tortillas
2 cans (10 oz. each) mild enchilada sauce
1 can (15 oz.) black beans, rinsed, drained
1 1/2 cups frozen corn
1 tsp. ground cumin
1 1/2 cups shredded Mexican cheese blend
1/2 cup chopped tomato
2 Tbsp. chopped fresh cilantro
-- Crunchy tortilla strips:

Heat oven to 350°F. Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into crumbles. Pour off drippings. Stir in 1 can enchilada sauce, black beans, corn and cumin; bring to a boil. Reduce heat; simmer 5 minutes, stirring occasionally.
Spray 11-3/4 x 7-1/2 inch baking dish with nonstick cooking spray. Arrange 3 tortillas in dish, cutting 1 as needed to cover bottom. Spread 1/4 cup remaining enchilada sauce over tortillas; cover with 1/3 beef mixture, then 1/3 cheese. Repeat layers twice, omitting final cheese layer. Pour remaining enchilada sauce over top.
Cover with aluminum foil. Bake in 350°F oven 30 minutes. Remove foil; sprinkle with remaining 1/2 cup cheese. Bake, uncovered, 5 minutes or until cheese is melted. Top with tortilla strips, if desired, tomato and cilantro.

Crunchy Tortilla Strips: Heat oven to 400°F. Cut 1 corn tortilla in half, then crosswise into 1/4-inch wide strips. Place strips in single layer on baking sheet. Spray lightly with nonstick cooking spray. Bake 4-8 minutes, or until crisp.
