I split our loaves in half when I buy them and put half the slices into the freezer in a plastic Ziploc bag. This way we use up the fresh bread quicker, and then when I pull out the rest of the loaf, it's still pretty fresh (once it's thawed). There's no other way that I've found to keep loaves as fresh - you just have to eat them!

Even freezing it tends to dry it out and make it hard. If it is an uncut loaf--- like French or sourdough bread etc. you can use this method to make it like fresh again:(probably will work for wholewheat sliced--- but white might mush up too much) I freeze it in a zip-lock freezer bag. When I want to use it, I defrost it for an hour then I remove from bag and quickly run it under the water, shaking off excess (or spritz it with the sprayer). Then I wrap it in foil and place in a 350 degree oven for up to a 1/2 hour. It gets all warm and moist like it was just baked.
Sometimes I dribble it with olive oil on top too--- and open the foil for another 5 minutes or so if I want a crusty loaf rather than a soft one.
This is a great method for keeping bread on hand for unexpected guests--- Cook up some pasta and sauce, cut up some greens and "bake" your hot bread--- gourmet! (I must be hungry!)
So--- back to your question: hard to keep sliced bread fresh. Best to keep it tightly sealed in fridge--- then if it gets hard anyway, toast it before using.

I place bread that I am going to use up in a couple days in a plasic bag, like the kind from the produce section of the grocery store. Bread that I want to last for a week or so I put in the refrigerator.

keep it tightly sealed up when you are done getting out your piece(s) of bread. If you know that you won't be eating from that loaf of bread for awhile (for ex. you buy three loafs and know you will only eat two in the next week) you can put it in the freezer for a couple days. As long as you keep it sealed up and not open, it shouldn't get stale fast.

I don't use much bread so I buy only the half loafs. i think Bunny Bread puts it out. That way it gets eaten and I don't have to throw away so much.
