If they are the small, clear white Japanese turnips, like Toyko Cross, you can just rinse them well and nip off any spots. Using them for soup, though, is a waste, as they are considered of the "salad turnip" type, meaning absolutely fabulously sweet just raw (try them grated on salads!). If you are using the more traditional turnip, like Purple-top Globe, then do peel them and wash well. They work best for soups.

I would recommend cutting them in rounds and roasting them in the oven for 20 minutes, then frying them in a pan until black-brown. This will richen the flavor. Make sure they're pretty much cooked before you put them in the soup, unless you plan on cooking the soup for a long time, because they take a while to cook. They're not good if they're not fully cooked. They would be crunchy in the middle.

I take off the skin and use them in a stew with turnips, parsnips, potatoes, carrots and of course beef chunks.

Turnips are prepared like most root vegetables. Peel, quarter or dice (preference yours) and add to soup.

Peel then coarsly chop them then,roast them. You car try using a food processor to liquify it to your own taste, i.e large bits or small bit.
