As race is not something that is reported on the Tax return the IRS does not know the race of the Tax payer. So that question could not truly be answered.

Race is not a question on the tax form so UNKNOWN but itemizing is mostly done by people with mortgages whose interest and property taxes exceed the standard deductions.
Any person whose home is paid off or who rents, rarely has enough to itemize.

I cannot think that there is any statistics to your question. There is not a "what race are you" on the tax forms so how can there be true statistics?
