CCD and CMOS are different design technologies for making camera sensors. This article goes into more detail: http://www.dalsa.com/markets/ccd_vs_cmos.asp
This is one of those hotly debated issues in digital photography - which design is better, but the bottom line is that they can both produce excellent results.
And personally, that's all I care about... the end result. I couldn't care less if they used french toast to make the image sensor.

All I can say is that Canon uses a CMOS sensor in all their digital SLR cameras, and they produce great quality photos. Enough said.
