please help me out, I cant find it any where, the last place that I have had it was at LUBY'S.................

I LOVE Lemon pies, too...I have two recipes that I alternated with...BUT FIRST, HERE IS THE ONE FROM "LUBY'S, IT IS FROM A COOKBOOK THAT I BOUGHT FROM THEIR RESTAURANT A FEW YEARS AGO...

"LUBY'S" Lemon Ice Box

1 can (14oz) sweetened condensed milk
4 extra large eggs,seperated
1/2 cup fresh lemon juice (3 to 4 lemons)
1 teaspoon grated lemon peel
1/4 cup granulated sugar
one 9-in. graham cracker crust

heat oven 350
in med. bowl combine milk, egg yolks, lemon juice, and lemon peel. mix until well blended. pour into crust. bake 5 minutes. refrigerate at least 2 hours.

large bowl beat egg whites until soft peaks form. add sugar, a talbespoon at a time, beat constasntly until stiff peaks form. spread over filing to edge crust.

bake 12 to 15 min. or until lightly brown.

---------------AND...

Lemon Ice Box Pie

6-8 servings 1 pie 50 min 20 min prep

1 can condensed milk
2 egg yolks
1/2 cup lemon juice, fresh
1 teaspoon grated fresh lemon rind
1 package graham crackers, crushed
4 tablespoons melted butter or oleo
1 tablespoon sugar
3 egg whites
4 1/2 tablespoons sugar
1/4 teaspoon cream of tartar

Prepare pie crust by mixing crushed graham crackers, butter and sugar in pie plate.
Pat in place along sides and bottom of plate.
Refrigerate until set.
In medium-size bowl, combine sweetened condensed milk, lemon juice and rind.
Blend in egg yolks, mixing well.
It will thicken.
Turn into cooled graham cracker crust.
Top with meringue made by beating egg whites with 3 Tbsp sugar and cream of tartar until it forms stiff peaks.
Bake at 350 degrees until lightly browned.
Chill in ice box about 1-1 1/2 hours before serving.

-----------AND THIS ONE WITH CREAM CHEESE:

Lemon Ice Box Pie

8 ounces cream cheese, softened
1/2 cup sugar
1 14-ounce can sweetened condensed milk
1 6-ounce can frozen lemonade concentrate (thawed)

8-ounce container whipped topping (thawed) & divided
**YOU CAN ALSO USE "DREAM WHIP" or WHIPPING CREAM WITH SUGAR (to taste).

yellow food coloring (optional)
1 prepared 9-inch pastry shell

Beat the softened cream cheese with an electric mixer, letting the mixer run for 3 or 4 minutes on high speed. It should be fluffy. Lower mixer speed to medium and gradually add the sweetened condensed milk, lemonade concentrate and food coloring (see Note, below).
Remove the bowl from the mixer, and gently fold in half of the whipped topping. Reserve remaining half for garnish.

Pour filling into a prepared pie shell, and chill for several hours until set. Serve pie with a dollop of whipped topping.

You only need 2 or 3 drops of food coloring, if you choose to use it. The result should be pale yellow --

Lemon Ice Box Pie

15 min 5 min prep

1 (12 ounce) can frozen lemonade
1 (10 ounce) can condensed milk
1 (12 ounce) container Cool Whip
1 pie shell, baked and cooled

Mix all ingredients together (reserve some Cool Whip for garnish) and pour into pie shell.
Refrigerate before serving.
Garnish with Cool Whip.

This may not be exactly what you're looking for, but that could do for the "sweet lemon mix" you're looking for (has to be diluted, though). I got this recipe from a Turkish friend. 12 servings Ingredients 12 lemons 6 tablespoons sugar 1 glass water lemon slices Heat the sugar and water until the sugar is dissolved completely, and allow to cool. Squeeze the lemons. Combine the sugar-water with the lemon juice, and stir. To serve, add enough water. Garnish each glass of lemonade with lemon slices if you desire.

Try this....... Good luck!!!

Three (3) eggs (room temperature)
One-half cup of lemon juice (fresh is best)
(Micro-waving for a minute or less produces more juice)

One teaspoon grated lemon rind - using the outside only with as little of the white inner flesh as possible (also referred to as zest) Grate lemon rind before micro-waving and/or juicing lemons

One can of condensed milk

Separate the eggs (MAKE SURE no yolk gets into the whites!). Beat the egg yolks well. Add lemon juice and grated rind. Add milk. Mix well. Pour into a Graham cracker crust.

The next obvious step for a lemon ice box pie would be to make and apply the meringue. However, my boy and I have noticed that the meringue gets hard after several days in the refrigerator and we end up taking it off so we can get to the "goodie" part beneath. Besides, that meringue takes up a lot of valuable space which could be totally occupied by the "goodie" part so we instruct our cook to forget the meringue, double the goodie part (listed above) and bake at 350 degrees F. for 12-15 minutes. If we want something on top, we will use some instant topping such as Cool Whip, Whipped Cream, Dream Whip, etc.

But for those of you who want that better-eat-it-quick-before-it-turns to-concrete meringue topping, here is the recipe:

For the meringue topping:

Three (3) egg whites from the above 3 separated eggs
One tablespoon water
A pinch of salt
One-fourth teaspoon cream of tartar
Five (5) tablespoons of sugar

The three (3) egg whites should be beaten in the large mixer bowl. Add one tablespoon of water and a pinch of salt. Beat on high until foamy and add one-fourth teaspoon cream of tartar. Beat until stiff. Add one tablespoon of sugar at a time (Mix well each addition) until 5 tablespoons have been added. Fold in one teaspoon of vanilla. Cover the top of the pie with meringue. Bake at 350 degrees F. until the top is a golden brown.
