Consider the effect of a food on the mind. According to Ayurveda, garlic will stimulate the lower cakras and people will have a tougher time to control their sexual thoughts and actions, This is the main reason to avoid tamasic ( ignorance producing ) foods like this. Garlic has medicinal effects or may be good for a cold, or ear infection, but in a yoga lifestyle, or one dedicated to spiritual progress, one can never accept a food that is harmful for the mind. It may be difficult to convince your friends about this one, but sooner or later people will begin to understand this dimension of food.
In Ayurvedic practice, garlic and onion are part of the PUNGENT category and are considered very stimulating.
Garlic, like onion and musrooms, are avoided by Jains, Hare Krishna devotees and Buddhist monks because they are considered too stimulating. or dulling, causing sexual urges and a general restlessness.
Tamasic foods are the opposite of sattvic—they break down the coordination between mind and body and inhibit the experience of pure consciousness. They create darkness rather than light. Tamasic foods include alcohol, garlic, onions, red meat, leftovers, and packaged foods, which have little life force.
I prepare food as an offering of love to Lord Krishna, or God, and in that spiritual tradition garlic ,mushroom and onions are considerred to be foods for people who don't want a high level of awareness, or who are not concerend with controlling their impulses. A brahmana would never use onion or garlic.
As an alternative, we use asafoetida, also kown as Hing to replace the flavor of onion and garlic, and sautee it in a little ghee . It is the resin of the Giant Fennel plant. It must always be cooked , or it is toxic. It adds wonderful flavor and is very good for digestion !
