Find some simple applications, like:
Make a timer for a desktop that lets the user either set an alarm to pop up at a certain time, or counts down from whatever the user sets until zero.
Write an app. that lets the user track assignments. They can put in the task, who requested it, what milestones are needed along the way, what's done so far, how long they estimate to finish each task, and how many hours they've spent on this so far.
Write a simple game - checkers, Go, etc.
Write a rolodex program - one that tracks names, addresses, phone #s, e-mail addresses,

Create an RSS aggregator. It could sit in the systray and pop-up news items as they come in... The user can point it to any number of RSS feeds and it can display any/all of them.
I made one like this, it scrolls the text from right-to-left, a la CNN's ticker.
