Gruyere - it has a slightly sweet, nutty flavor. It's AMAZING mixed with white cheddar and made into baked macaroni & cheese. Or just eating slivers with a good wine...
Runners-up would be: Stilton, fontina, white extra sharp cheddar and parmesan.
I guess I love these because not only are they good in recipes, but great on their own too. You shouldn't have to "do" anything to cheese to enjoy it.

I love all cheese (except the ones that smell like stinky feet).. but my favorite for snacking with crackers is colby cheese.

I think my favorite is Manchego. I really like the mild, slightly nutty flavor. Or Brie, I love the creaminess of brie. Or sharp cheddar...Man, I can't decide!
