You should not have to configure anything on your cable box. As long as you are connected to component, DVI or HDMI, all output will be 480p (analog stations), 720p/1080i for HDTV stations. Then, your plasma will scale the signal to 720p for display on your TV.

If it's a motorola cable box, with the TV ON and the cable box OFF, hit the Menu button on the cable box remote. just hit the menu, don't hold it. set as follows
TV type 16:9
YPbPr 1080i (or 720p) I've found 1080i work best for my 768 TV
4:3 override Off
hit menu again, and set the TV to display wide screen.
