It could be anything from Dry & Earthy to Smooth & Fruity to Rough & Hurty to Tabacco-y & Plummy. It really depends on the winery, the winemaker, the vineyard, the year, the blend, the age, and the quality of the grapes.

California Cabernet are extremely mellow with a full body. I find it extremely difficult to describe "TASTE' using words. For example, what is 'extremely mellow' for my personal taste might be different for you.

It is a richer flavor than a burgundy, but a lot depends on the grapes, where they were grown and how they are handled
