I used to love chardonnay until they started doing barrel fermentation. Now it all tastes like thick butter, not like before when it was refreshing and crisp. So that's up to your palette.

Many people prefer malolactation in their chardonnay, as well as the oak, so you may want The Big Butter.taste

some do not like that in a chardonnay so, (rather flippantly, I must admit), I steer them to a sauvingnon blanc or a fume blanc
