There are hundreds of different cheeses in France alone, and they are different types, not brands. The brand is the name of the producer, ie, Wexford cheddar, Davidstow cheddar. Cheedar is the type, wexford or Davidstow the brand. Cheeses made from cows milk are the most common, but there are cheeses made from every type of milk you can get.
