Dinner translates as "Abend Essen" or evening meal. There is not really a specific word for sandwiches. but the Bavarian word for a roll eaten like a sandwich is "Semmeln" or "Brotchen" I have ordered a Leberwurstsemmeln and a Fischbrotchen at a Weinachtsmarkt (Christmas market).

Dinners can be either Mittagessen or Abendbrot / Abendessen, depending on when you have your main meal. Germans usually have it at lunch time (after school) or tea time (after work).
As for sandwiches.... most Germans I know would just say Schnitte (pl.: Schnitten), which refers to a slice of bread, what's on it is irrelevant.

Dinner is abendbrot
Rolls are brotchen so you would ask for 'brothchen mit kase' for a cheese roll
