It says to refrigerate after opening, but then it becomes really hard. Can you leave it out? Will it spoil?

Definitely refrigerate it... mots "natural" or raw nut butters don't have or are low on preservatives (which is a good thing!) so they won't keep in heat. When you pull it out of the fridge, just use a blunt knife to stir it & warm it up.

Well the jar of peanut butter does say to refrigerate after opening but I don't. I'm still alive! I had peanut butter sitting out for a long time and no it won't spoil. BUT it does get a rancid(weird stale) flavor after about a year or so.

You should refrigerate it if you want it to last and stay fresh. You can chip out the amount you'll need, let it warm up a bit, then spread it. It's worth the wait.
